A stress-free, dump-and-go slow cooker recipe that yields tender, flavorful chicken tacos using just five simple ingredients. Perfect for busy weeknights, meal prep, or feeding a crowd.

  • 4 boneless, skinless chicken breasts
  • 1 jar (16 oz) medium salsa
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 8–10 tortillas (flour or corn)

Instructions

  1. Place chicken breasts in the bottom of a 6-quart slow cooker in a single layer.
  2. Pour the entire jar of salsa over the chicken.
  3. Sprinkle the taco seasoning evenly over the chicken and salsa.
  4. Add the drained and rinsed black beans to the pot and gently stir to combine.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  6. Remove chicken from the pot and shred into bite-sized pieces using two forks.
  7. Return shredded chicken to the pot and stir to coat in the sauce.
  8. Serve immediately with warm tortillas and desired toppings.

Notes

If the sauce is too thin, leave the lid off for the last 30 minutes to reduce. If too thick, add a splash of water or broth. Chicken can be cooked from frozen but requires an extra 1-2 hours. For a creamy version, stir in shredded cheese during the last 30 minutes. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
