A quick and easy breakfast burger featuring a juicy seasoned beef patty, crispy bacon, a runny fried egg, sharp cheddar, and toasted brioche bun for the ultimate morning indulgence.

  • 6 oz (170 g) ground beef (80/20 blend recommended)
  • Salt and freshly ground black pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • 3 thick-cut bacon strips
  • 1 large egg per burger (room temperature)
  • 1 slice sharp cheddar cheese per burger
  • 1 brioche bun per burger, lightly toasted
  • 1 tablespoon unsalted butter (for toasting buns)
  • 1 tablespoon mayonnaise (optional)
  • Hot sauce or ketchup (optional, to taste)
  • Optional add-ons: avocado slices, fresh arugula or baby spinach, tomato slices

Instructions

  1. Prepare the Burger Patty: In a bowl, mix 6 oz (170 g) of ground beef with salt, pepper, garlic powder, and onion powder. Shape into a roughly 4-inch (10 cm) round patty about 3/4 inch (2 cm) thick. Set aside. (5 minutes)
  2. Cook the Bacon: Heat a skillet over medium heat and cook 3 bacon strips until crispy and golden, about 5-7 minutes, flipping occasionally. Remove bacon and drain on paper towels. Leave bacon fat in pan. (7 minutes)
  3. Cook the Burger Patty: Increase heat to medium-high. Place patty in skillet with bacon fat. Sear without moving for 3-4 minutes until crust forms. Flip and cook another 3-4 minutes for medium-well. Add cheddar slice in last minute to melt. (8 minutes)
  4. Fry the Egg: In a separate non-stick pan, melt a teaspoon of butter over medium heat. Crack egg gently, keeping yolk intact. Cook until whites set but yolk is runny, about 2-3 minutes. Season with salt and pepper. (3 minutes)
  5. Toast the Buns: Spread butter on brioche buns and toast in toaster oven or skillet until golden and crispy, about 2 minutes. (2 minutes)
  6. Assemble the Burger: Spread mayonnaise on bottom bun if using. Place cheeseburger patty on bun, layer crispy bacon, then fried egg. Add optional tomato slices or greens. Top with bun. (3 minutes)
  7. Serve Immediately: Enjoy while warm with runny yolk.

Notes

Do not overwork the burger patty to keep it tender. Cook burger on medium-high heat for a good crust. Retain bacon fat for cooking burger for extra flavor. Fry eggs gently on medium-low heat to keep yolks runny. Toast buns last to keep them crunchy. Multitask cooking bacon, burger, and eggs in sequence to keep everything hot and fresh. Avoid overcooking eggs.
