Instructions

  1. Preheat oven to 350°F (175°C). Peel and slice peaches into 1/2-inch thick slices.
  2. In a bowl, toss peaches with granulated sugar, lemon juice, ground cinnamon, cornstarch, and vanilla extract. Let sit for about 10 minutes.
  3. In a medium saucepan over medium heat, melt butter. Stir constantly until it foams and turns golden brown with a nutty aroma (about 4-5 minutes). Remove from heat immediately.
  4. Pour browned butter into a mixing bowl. Add rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Stir until combined. Fold in nuts if using.
  5. Pour peach mixture evenly into a 9-inch square baking dish. Spread oat streusel topping evenly over peaches.
  6. Bake for 35-40 minutes until peach juices bubble and topping is golden brown and crispy. Tent with foil after 25 minutes if topping browns too quickly.
