A festive holiday appetizer featuring a wheel of brie wrapped in flaky, buttery phyllo dough strips and topped with sweet-tart cranberry honey jam, baked until golden and gooey.

  • 1 package (16 oz) phyllo dough, thawed
  • 1 wheel (8 oz) brie cheese
  • 1 can (14 oz) whole berry cranberry sauce
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons honey
  • Fresh thyme or rosemary sprigs for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Remove the brie from its box and peel off the wax paper. Cut a thin slice off the top of the brie to create a ‘lid’, but leave the rind intact.
  3. In a small bowl, mix the cranberry sauce with the honey until combined.
  4. Unroll the phyllo dough and immediately cover unused sheets with a damp kitchen towel to prevent drying.
  5. Lay one sheet of phyllo on the counter and brush with melted butter. Place a second sheet perpendicular to the first and brush with butter. Repeat with two more sheets to create a four-sheet cross shape.
  6. Place the brie wheel in the center of the phyllo cross.
  7. Drape the four loose ends of the phyllo sheets over the brie to cover it completely. Trim excess if necessary, then fold the remaining dough underneath the wheel to seal.
  8. Brush the top of the wrapped brie generously with the remaining melted butter.
  9. Spoon the cranberry-honey mixture over the top of the wrapped brie, allowing it to drip down the sides.
  10. Bake for 20-25 minutes until the phyllo is golden brown and puffed. If browning too quickly, cover loosely with foil for the last 5 minutes.
  11. Remove from oven and let rest for 5 minutes before garnishing with fresh herbs and serving.

Notes

Keep phyllo dough covered with a damp towel at all times to prevent cracking. Do not wrap the dough too tightly, as the cheese expands during baking. For best texture, serve immediately after resting. Leftovers can be stored in the fridge for up to 2 days and reheated in a toaster oven or air fryer.
