A quick and easy weeknight dinner featuring crispy skin chicken thighs glazed with a sticky honey garlic sauce, paired with perfectly roasted broccoli.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large head broccoli (about 12 oz / 350g), cut into bite-sized florets
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss broccoli florets with 1 tablespoon olive oil, salt, pepper, and lemon zest if using. Spread evenly on a baking sheet and set aside.
  3. Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking (about 2-3 minutes).
  5. Add chicken thighs skin-side down and cook without moving for 6-8 minutes until skin is golden and crispy. Flip and cook skin-side up for 3 minutes.
  6. Reduce heat to medium-low. In a small bowl, mix minced garlic, honey, soy sauce, apple cider vinegar, and red pepper flakes. Pour sauce over chicken, spooning gently over the skin.
  7. Transfer the skillet with chicken and the baking sheet with broccoli to the oven. Roast for 15-20 minutes until chicken reaches an internal temperature of 165°F (74°C) and broccoli is tender with browned tips.
  8. Remove skillet from oven and let chicken rest for 5 minutes. Toss broccoli gently and drizzle any pan sauce over the chicken before serving.

Notes

Pat chicken skin dry before searing for best crispiness. Do not move chicken while searing skin-side down. If sauce thickens too much before oven transfer, add a splash of water or broth to loosen. Rest chicken after cooking to keep it juicy. Use tamari for gluten-free option and maple syrup instead of honey for a different sweetness profile. Reheat chicken in skillet or air fryer to maintain crisp skin; avoid microwaving.
