  • Vegetable oil for frying
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 2 cups shredded green cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup crumbled blue cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Freshly ground black pepper to taste
  • 12 slider buns, lightly toasted (brioche recommended)
  • Optional: sliced pickles or celery sticks for extra crunch

Instructions

  1. Pour the buttermilk into a large bowl. Add the chicken pieces and stir to coat. Cover and refrigerate for at least 20 minutes or up to 2 hours.
  2. In a shallow dish, combine the all-purpose flour, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well.
  3. In a medium bowl, combine shredded cabbage, shredded carrots, and crumbled blue cheese. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, and black pepper. Pour dressing over the cabbage mixture and toss until evenly coated. Chill until ready to serve.
  4. Pour vegetable oil into a skillet to a depth of about 1 inch. Heat over medium-high heat until it reaches 350°F (175°C).
  5. Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the seasoned flour mixture, pressing gently to coat. Fry in batches, 3-4 pieces at a time, for 3-4 minutes per side or until golden brown and cooked through (internal temp 165°F / 74°C). Drain on a wire rack or paper towels.
  6. Place fried chicken pieces in a large bowl. Pour buffalo wing sauce over and toss gently to coat each piece evenly.
  7. Lightly toast slider buns. Place a buffalo chicken piece on the bottom half of each bun, top with a generous spoonful of blue cheese slaw, and cover with the top bun. Add pickles or celery sticks if desired.
  8. Serve immediately while chicken is crispy and hot. Optionally, keep chicken warm in a low oven (200°F / 95°C) for up to 15 minutes before serving.

Notes

For extra crunch, double coat the chicken by dipping back into buttermilk and flour mixture. Maintain oil temperature at 350°F to avoid soggy or burnt coating. Drain slaw if too wet before assembling sliders. Keep sliders assembled just before serving to avoid soggy buns. Gluten-free and dairy-free substitutions are possible.
