  • 3 cups day-old sourdough bread, cubed
  • 1/2 cup (113g) unsalted butter
  • 1/4 cup fresh sage leaves, packed
  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced
  • 2 cups low-sodium chicken or vegetable broth
  • 2 large eggs, beaten
  • Salt and black pepper to taste
  • 1/2 cup toasted pecans or walnuts, chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C). If using fresh bread, spread cubes on a baking sheet and bake for 10 minutes to dry out, then cool completely.
  2. In a large skillet over medium heat, melt the butter. Swirl occasionally until it foams, crackles, and turns golden brown with a nutty aroma (about 5 minutes). Remove from heat immediately and pour into a measuring cup.
  3. In the same skillet, add a tablespoon of oil if needed. Sauté diced onion until translucent (about 4 minutes). Add minced garlic and fresh sage leaves, cooking for another minute until fragrant.
  4. In a large mixing bowl, whisk together beaten eggs, warm broth, and the browned butter. Stir in the sautéed onion, garlic, and sage mixture. Season with salt and pepper.
  5. Add the dried bread cubes to the wet mixture and gently toss to coat evenly. Let sit for 5 minutes to allow the bread to absorb the liquid.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Press down gently to create an even layer. Optionally drizzle with extra melted butter.
  7. Bake at 375°F (190°C) for 25-30 minutes, or until the top is golden brown and crispy.
  8. Let the stuffing rest for 5 minutes before serving.

Notes

Ensure bread is dry to prevent mushiness. Watch brown butter closely as it burns easily. For a vegan version, swap butter for olive oil/vegan butter and use vegetable broth. For gluten-free, use certified GF sourdough.
