These crispy Blackstone griddle smash burger sliders are quick, easy, and perfect for 4th of July cookouts or casual summer gatherings. They feature thin, seared patties with a golden crust, melted cheese, and classic toppings on mini slider buns.

  • 1 pound (450g) ground beef (80/20 blend)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 mini slider buns (potato slider buns recommended)
  • 8 slices American or cheddar cheese (optional)
  • Yellow mustard, for spreading
  • Sliced dill pickles
  • Thinly sliced red or white onion
  • 2 tablespoons softened butter
  • Optional toppings: lettuce leaves, tomato slices, ketchup, mayo

Instructions

  1. Preheat your Blackstone griddle to medium-high heat (about 400ยฐF / 200ยฐC). Let it get good and hot (about 5 minutes).
  2. Divide the ground beef into 8 equal portions, about 2 ounces (60g) each. Gently roll into loose balls without compacting too much.
  3. Season the beef balls on all sides with kosher salt and freshly ground black pepper right before cooking.
  4. Place 4 beef balls onto the griddle, spaced evenly. Immediately press down firmly with your metal spatula to smash them thinโ€”about ยผ inch thick (6mm). Hold pressure for about 10 seconds to flatten fully and create that crust.
  5. Cook for 2-3 minutes without moving them until edges turn crispy and brown.
  6. Flip the patties carefully using your spatula, then add a slice of cheese on each patty. Cook for another 1-2 minutes until cheese melts and patties are cooked through but still juicy inside.
  7. While patties cook, butter the slider buns lightly on the cut side using your basting brush, then toast them on the griddle until golden (about 1 minute).
  8. Assemble the sliders: spread mustard on the bottom bun, add the cheesy patty, top with sliced pickles and onions, then crown with the top bun.
  9. Repeat the process with the remaining beef balls to make 8 sliders total.
  10. Serve immediately for best texture and flavor.

Notes

Use fresh ground beef for best texture. Keep spatula well-oiled to prevent sticking. Press patties only once firmly to retain juiciness. For caramelized onions, cook sliced onions slowly on the griddle before assembling. Leftover sliders keep well refrigerated for up to 2 days; reheat gently to avoid drying buns.
