Ingredients

Scale
  • 2 pounds chicken wings, separated into drumettes and flats
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon buttermilk
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. Pat the wings dry with paper towels. This is crucial for crispy skin.
  2. Preheat the air fryer to 380°F (193°C) for 5 minutes.
  3. In a small bowl, mix the baking powder, garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper.
  4. Place the dried wings in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle the seasoning mixture over the wings and toss until evenly coated.
  5. Arrange the wings in a single layer in the air fryer basket, ensuring they are not touching. Cook in batches if necessary.
  6. Cook for 12 minutes. Flip the wings with tongs, then cook for another 10-12 minutes until golden brown and internal temperature reaches 165°F (74°C).
  7. Let the wings rest in the basket for 2 minutes to set the skin.
  8. While the wings cook, whisk together all ranch dip ingredients in a small bowl. Refrigerate for 30 minutes if time allows.

Notes

Pat the wings very dry for maximum crispiness. Use aluminum-free baking powder to avoid a metallic taste. Do not overcrowd the air fryer basket. Let wings rest after cooking to keep skin crunchy. For extra heat, toss cooked wings in hot sauce.
