Creamy Slow Cooker Chicken Enchilada Soup

A hearty, spicy, and creamy soup that comes together easily in a slow cooker. Perfect for busy weeknights, this dish balances rich flavors with simple pantry ingredients for a comforting meal.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 15 ounces medium or hot salsa
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cubed
  • 1 packet (1 ounce) enchilada seasoning or 2 tablespoons homemade blend
  • 1/2 cup heavy cream
  • 1 cup shredded Mexican blend cheese, divided
  • Optional toppings: sour cream, chopped cilantro, diced avocado, crushed tortilla chips

Instructions

  1. Place the chicken breasts or thighs into the bottom of a 6-quart slow cooker.
  2. Pour the salsa over the chicken. Add the drained black beans and chicken broth. Sprinkle the enchilada seasoning evenly over the top. Do not stir yet.
  3. Cover the slow cooker and cook on low for 6 to 7 hours (or high for 3 to 4 hours) until the chicken reaches an internal temperature of 165°F and shreds easily.
  4. Remove the chicken from the pot and shred it into bite-sized pieces using two forks. Return the shredded chicken to the pot.
  5. Stir in the softened cream cheese cubes. Let the pot sit on ‘warm’ for 10 minutes if necessary to help the cheese melt completely.
  6. Stir in the heavy cream and half of the shredded cheese. Taste and adjust seasoning with salt or pepper if needed.
  7. Ladle the soup into bowls and top with the remaining cheese, sour cream, cilantro, avocado, and tortilla chips. Serve immediately.

Notes

For a thicker soup, use less broth. For a thinner consistency, add an extra cup of broth. If using frozen chicken, increase cooking time by 1-2 hours. Cream cheese should be added at the end to prevent separation. Leftovers keep in the fridge for up to 4 days or can be frozen for up to 3 months.
