  • 1 medium ripe banana, mashed (about 1/2 cup or 120g)
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) Greek yogurt (plain or vanilla)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a jar or container until mostly smooth with a few tiny lumps.
  2. Add the peanut butter, milk, Greek yogurt, maple syrup (if using), and vanilla extract. Stir until the peanut butter is fully incorporated.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir until everything is well combined.
  4. Seal the jar and refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or granola if desired.

Notes

For the creamiest texture, use rolled oats (not instant or steel-cut). The riper the banana, the sweeter the oats. If using natural peanut butter, let it come to room temperature for easier mixing. The oats keep in the fridge for up to 5 days. For warm oats, microwave for 45-60 seconds. Flavor improves after a day or two.
