  • 1/4 cup (60g) plain or vanilla Greek yogurt
  • 1 tablespoon (15g) chia seeds (optional)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • Pinch of salt
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)

Instructions

  1. Mash the banana: In your jar or a small bowl, add the peeled banana. Use a fork to mash it until mostly smooth with a few tiny lumps left for texture (about 30 seconds).
  2. Add the wet ingredients: To the mashed banana, add the peanut butter, milk, Greek yogurt, and vanilla extract (if using). Stir together with your fork until the peanut butter is fully incorporated and the mixture looks smooth and pale brown (about 1 minute). If your peanut butter is stubborn, microwave the jar for 10-15 seconds to soften it first.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir well until every oat is coated in the creamy liquid. Scrape the bottom and sides of the jar to ensure no dry patches remain.
  4. Sweeten if needed: Taste the mixture. If your banana wasn’t super ripe or you like things sweeter, stir in your maple syrup or honey. Usually, the banana and peanut butter provide enough sweetness.
  5. Seal and refrigerate: Put the lid on your jar and give it a good shake (if your jar has a tight seal) or stir one more time. Place it in the refrigerator for at least 4 hours, but overnight (8 to 12 hours) is best.
