Instructions

  1. In a medium bowl, peel and thoroughly mash the ripe banana with a fork until it is almost a puree.
  2. Add the creamy peanut butter, honey (if using), cinnamon, and salt to the mashed banana. Stir vigorously until the peanut butter is fully incorporated and the mixture is smooth.
  3. Pour in the rolled oats and chia seeds. Stir until the oats are evenly coated with the banana-peanut butter mixture to prevent clumping.
  4. Slowly pour in the milk while stirring. Ensure the oats are submerged but not swimming, aiming for a 1:1 ratio of oats to milk.
  5. Divide the mixture evenly among prepared jars (about 1.5 cups per 16-ounce jar). Press the oats down gently to remove air pockets.
  6. Seal the jars tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  7. In the morning, remove a jar and give it a good stir. Add a splash of milk if the mixture is too thick. Top with sliced bananas or extra peanut butter if desired.
