  • 6 cups low-sodium chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 8 lasagna noodles, broken into 2-inch pieces
  • ½ cup heavy cream
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the ground beef and break it up with a wooden spoon. Cook for 6-8 minutes until nicely browned.
  4. Season the meat with salt, pepper, oregano, and red pepper flakes. Stir and cook for 1 minute.
  5. Stir in the tomato paste and cook for 1 minute.
  6. Pour in the chicken broth, crushed tomatoes, and tomato sauce. Stir, scraping up any browned bits from the bottom.
  7. Bring the soup to a boil, then reduce heat to a gentle simmer. Add the broken lasagna noodles and stir well. Cover and simmer for 12-15 minutes, stirring occasionally, until noodles are tender.
  8. Reduce heat to low and stir in the heavy cream. Let warm through for 1-2 minutes.
  9. Ladle soup into bowls. Top each with a dollop of ricotta, a sprinkle of mozzarella, and a shower of Parmesan. Garnish with fresh basil or parsley if desired.

For best results, use low-sodium broth to control saltiness. Toast the tomato paste for deeper flavor. Let the soup rest 5-10 minutes before serving to meld flavors. If making ahead, prep through step 7 and reheat gently before adding cream and cheeses. Leftovers keep up to 4 days in the refrigerator; add a splash of broth when reheating.
