  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 3 cups low-sodium chicken broth
  • 8 ounces uncooked pasta (penne or rigatoni)
  • 4 ounces cream cheese, softened
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Cut chicken breasts into bite-sized pieces and season lightly with salt and pepper.
  2. Heat olive oil in a large deep skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown but not fully cooked through. Remove chicken and set aside.
  3. In the same pan, sauté minced garlic for about 30 seconds until fragrant. Add halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  4. Pour in chicken broth and stir to scrape any brown bits off the bottom of the pan.
  5. Add uncooked pasta and stir to combine.
  6. Bring mixture to a gentle boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
  7. Return cooked chicken to the pan. Add softened cream cheese in dollops and stir gently until melted and sauce is creamy.
  8. Stir in chopped fresh basil leaves. Season with salt, black pepper, and optional red pepper flakes to taste. Cook for an additional 2 minutes.
  9. Remove from heat and sprinkle with grated Parmesan cheese. Serve immediately.

Notes

If sauce is too thick, add a splash of broth or water to loosen. If too thin, simmer uncovered to reduce. Use softened cream cheese for smooth sauce. Avoid overcrowding pan when searing chicken. Stir gently after adding cream cheese to prevent breaking pasta.
