  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups graham crackers, crushed
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons powdered sugar (optional)

Instructions

  1. In a medium bowl, combine sliced strawberries, 1/4 cup granulated sugar, and lemon juice. Toss gently to coat and let macerate at room temperature for about 10 minutes.
  2. Crush graham crackers into fine crumbs using a food processor or plastic bag and rolling pin. Mix crumbs with melted butter until well combined. Press mixture evenly into the bottom of a 9-inch springform pan or serving dish. Refrigerate to firm up.
  3. In a large bowl, whip heavy cream with an electric mixer until soft peaks form. Add powdered sugar and vanilla extract, then whip until medium peaks form, being careful not to overbeat.
  4. In a separate bowl, stir mascarpone cheese until smooth. Gently fold whipped cream into mascarpone until fully combined and light.
  5. Remove crust from fridge. Spoon half of the mascarpone cream over crust and spread evenly. Layer half of the macerated strawberries with juices over the cream. Repeat layers with remaining cream and strawberries.
  6. Cover dessert with plastic wrap and chill in the refrigerator for at least 4 hours or overnight to set and meld flavors.
  7. Before serving, let dessert sit at room temperature for 5-10 minutes. Run a knife around pan edges before releasing springform. Slice and serve chilled.

Notes

Let strawberries macerate for at least 10 minutes to soften and enhance flavor. Keep bowl and beaters cold when whipping cream to prevent overbeating. If crust is too soft after chilling, freeze for 5 minutes before serving. Drain excess strawberry juice if too watery to avoid soggy crust.
