  1. Cook the bacon: Place 6 slices of thick-cut bacon in a cold skillet over medium heat. Cook for about 8-10 minutes, flipping occasionally, until crispy but not burnt. Alternatively, bake in the oven at 400°F (200°C) for 15-20 minutes on a parchment-lined tray. Drain on paper towels and crumble once cool.
  2. Prepare the pickles: While bacon cooks, finely chop 1 cup (150 grams) of dill pickles. Drain well to avoid watery dip, leaving a few tiny chunks for texture.
  3. Mix the base: In a medium bowl, combine 8 oz (226 grams) softened cream cheese and ½ cup (120 ml) sour cream. Blend until smooth and creamy with no lumps.
  4. Add seasonings: Stir in ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon freshly ground black pepper, and a pinch of salt. Add freshly chopped dill (1 tablespoon) if using.
  5. Fold in pickles and bacon: Gently mix in the chopped pickles and crumbled crispy bacon. Avoid overmixing to maintain texture.
  6. Chill and serve: Cover and refrigerate the dip for at least 30 minutes before serving to let flavors meld. Serve chilled with crackers, veggies, or chips.
