A quick and easy frozen yogurt bark featuring creamy Greek yogurt, fresh peaches, crunchy granola, and a drizzle of honey. Perfect for a refreshing summer snack.

Ingredients

Scale
  • 2 cups (480 ml) Greek yogurt (full-fat or 2%)
  • 2 medium fresh peaches, peeled and sliced
  • 1 cup (100 g) granola
  • 3 tablespoons (45 ml) honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a mixing bowl, combine 2 cups (480 ml) of Greek yogurt with 1 teaspoon (5 ml) vanilla extract and optional 1 teaspoon lemon zest. Stir until smooth and fragrant.
  2. Peel and slice 2 medium peaches into thin, even slices. Pat dry with a paper towel if very juicy.
  3. Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper or a silicone baking mat.
  4. Pour the yogurt mixture onto the lined baking sheet and spread evenly about 1/4 inch (6 mm) thick.
  5. Arrange peach slices evenly over the yogurt layer. Sprinkle 1 cup (100 g) granola over the top.
  6. Drizzle 3 tablespoons (45 ml) honey gently over everything.
  7. Place the baking sheet flat in the freezer for at least 4 hours or overnight. Check after 2 hours and rotate if needed.
  8. Once completely frozen, remove from freezer and peel the bark off the parchment paper. Break into irregular pieces.
  9. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use full-fat or 2% Greek yogurt for best texture. Pat peaches dry to avoid sogginess. Add granola on top just before freezing to keep it crunchy. Let bark sit at room temperature for 5 minutes before serving if too hard. Store in airtight container in freezer up to 2 weeks. For dairy-free, substitute Greek yogurt with coconut or almond yogurt and honey with maple syrup.
