A creamy, comforting white chicken chili made in the slow cooker with tender chicken, white beans, and a velvety texture from cream cheese and a cornstarch slurry. Perfect for busy weeknights and meal prep.

  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium)
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened and cubed
  • ½ cup heavy cream
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • Optional toppings: shredded Monterey Jack cheese, fresh cilantro, diced avocado, sour cream, tortilla strips, lime juice

Instructions

  1. Place chicken breasts in the bottom of a 6-quart slow cooker. Add diced onion, minced garlic, and diced green chiles on top. Sprinkle with cumin, chili powder, oregano, salt, and pepper. Pour in chicken broth, ensuring chicken is mostly submerged.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and easily shreds.
  3. Remove chicken from slow cooker and shred with two forks or a hand mixer on low speed. Return shredded chicken to the pot.
  4. Stir in drained Great Northern beans and cubed cream cheese until cream cheese is mostly melted.
  5. In a small bowl, whisk together cornstarch and cold water until smooth. Pour into slow cooker and stir well.
  6. Add heavy cream and stir to combine. Cover and cook on high for 20-30 minutes, until chili has thickened.
  7. Taste and adjust seasoning with additional salt, pepper, or cumin if desired.
  8. Serve hot with desired toppings.

Notes

Let cream cheese soften at room temperature for 30 minutes before adding to prevent clumping. Drain and rinse beans to avoid murky chili. For best texture, cook on low. Add cornstarch slurry at the end to thicken. Taste and adjust seasoning after cooking.
