  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 2 fresh jalapeรฑos, seeded and finely chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 2 cups low-sodium chicken broth
  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup sour cream
  • Optional garnish: Fresh cilantro, diced avocado, shredded Monterey Jack cheese

Instructions

  1. Dice the onion and jalapeรฑos. Mince the garlic cloves until paste-like.
  2. Place chicken breasts in the bottom of a 6-quart slow cooker. If breasts are large, cut in half.
  3. Sprinkle diced onion, minced garlic, and chopped jalapeรฑos over the chicken.
  4. Add drained white beans, diced green chilies, and ground cumin.
  5. Pour chicken broth over ingredients. Liquid should just cover them.
  6. Cook on Low for 6-7 hours or High for 3-4 hours until chicken is tender.
  7. Remove chicken, shred with two forks, and return to pot.
  8. In the last 30 minutes of cooking, add cubed softened cream cheese and stir until dissolved.
  9. Optional: Use an immersion blender to blend half the beans for a thicker texture.
  10. Taste and adjust seasoning with salt and pepper.
  11. Stir in sour cream just before serving.
  12. Serve hot with optional garnishes like cilantro, avocado, or cheese.

Notes

Add cream cheese in the last 30 minutes to prevent separation. Use full-fat cream cheese for best texture. For a thicker chili, mash some beans before adding cream cheese. Can be frozen for up to 3 months.
