  • 1 lb lean ground beef
  • ½ lb Italian sausage, casing removed
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken or beef broth
  • 6 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese (245 g), full-fat
  • 1 cup shredded mozzarella cheese (about 4 oz)
  • ½ cup grated Parmesan cheese (50 g)
  • 2 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil, chopped

Instructions

  1. Brown the ground beef and Italian sausage in a large skillet over medium heat, breaking up the meat with a spoon, until no longer pink, about 7 minutes. Drain excess fat if desired.
  2. Add chopped onion and minced garlic to the skillet and sauté until softened, about 5 minutes.
  3. Transfer the meat and aromatics to the crockpot. Add diced tomatoes, tomato sauce, broth, Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine.
  4. Break lasagna noodles into roughly 2-inch pieces and add to the crockpot. Stir gently to submerge noodles completely.
  5. Cover and cook on low for 4 to 5 hours, stirring once or twice if possible, until noodles are tender but not mushy. Alternatively, cook on high for 2 to 3 hours, watching noodles closely.
  6. In a small bowl, mix ricotta cheese with a pinch of salt and black pepper. Optionally add a teaspoon of fresh chopped basil or parsley.
  7. Just before serving, stir fresh basil into the soup. Ladle soup into bowls and add generous spoonfuls of the ricotta mixture on top. Sprinkle shredded mozzarella and Parmesan cheese over the ricotta dollops. The heat will gently melt the cheese.
  8. If the soup thickens too much, add a splash of broth or water to loosen it.

Notes

Use no-boil lasagna noodles broken into pieces to avoid pre-cooking. Stir gently once or twice during cooking to prevent noodles from clumping. If soup thickens too much, add broth or water to loosen. Ricotta dollops can be prepared ahead and kept chilled until serving. For gluten-free, use gluten-free noodles. For vegetarian, substitute meat with mushrooms or lentils and use vegetable broth.
