This Creamy Caramel Apple Cheesecake Dip with Toffee Bits is a quick and easy no-bake dessert that comes together in just 5 minutes. Perfect for any occasion, it features a silky cream cheese base swirled with caramel and studded with crunchy toffee bits, served with fresh apple slices.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup caramel sauce, plus more for drizzling
  • 1/4 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • 1/2 cup toffee bits, plus extra for topping
  • 34 medium apples (Granny Smith or Honeycrisp), for dipping
  • Optional: pinch of flaky sea salt for topping

Instructions

  1. Soften the cream cheese: Take the 8 oz block of cream cheese out of the fridge about 30-45 minutes before starting. It should be soft enough that pressing it with your finger leaves a dent. If forgotten, microwave in 10-second bursts until soft, being careful not to melt it.
  2. Beat the cream cheese: Place the softened cream cheese in a mixing bowl. Beat with a hand mixer on medium speed for about 2 minutes until completely smooth and fluffy. Scrape down the sides and bottom of the bowl with a spatula.
  3. Add the powdered sugar: With the mixer on low, slowly add the 1/4 cup of sifted powdered sugar. Mix until fully incorporated, about 30 seconds. The mixture will look thick and stiff.
  4. Pour in the vanilla and heavy cream: Add the 1 teaspoon of vanilla extract and 2 tablespoons of heavy cream. Beat on medium speed for another minute until the mixture becomes light and airy.
  5. Fold in the caramel sauce: Add 1/2 cup of caramel sauce to the bowl. Use a spatula to gently fold it into the cream cheese mixture, leaving some swirls of caramel for a marbled effect.
  6. Mix in the toffee bits: Reserve about 2 tablespoons of toffee bits for the top. Gently fold the remaining toffee bits into the dip.
  7. Transfer to serving bowl: Spoon the dip into a serving bowl or pie plate. Spread evenly with the back of a spatula and create swirls on top.
  8. Top it off: Drizzle a little more caramel sauce over the top. Sprinkle the reserved toffee bits on top. Add a pinch of flaky sea salt if desired.
  9. Chill (optional but recommended): Serve immediately or refrigerate for about 30 minutes to firm up and meld flavors. Can be made ahead and refrigerated for up to 2 days.
  10. Prep the apples: Right before serving, core and slice the apples. Arrange them around the dip on a platter.

Notes

For best results, use room temperature cream cheese to avoid lumps. Do not overmix the caramel; leave swirls for visual appeal. Granny Smith apples are recommended for their tartness that balances the sweet dip. The dip can be stored in the refrigerator for up to 4 days. If too thick, add an extra tablespoon of heavy cream; if too thin, refrigerate for 15 minutes.
