Creamy Burrata Bruschetta with Roasted Cherry Tomatoes and Balsamic Glaze

A quick and easy appetizer featuring crusty bread topped with creamy burrata, roasted cherry tomatoes, and a tangy balsamic glaze. Perfect for casual gatherings or a simple treat.

  • 1 baguette or crusty Italian bread, sliced (about 12 slices)
  • 2 tablespoons extra virgin olive oil (for brushing bread)
  • 2 cloves garlic, halved (for rubbing on toasted bread)
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • ยฝ teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano or fresh basil, finely chopped (optional)
  • 8 ounces fresh burrata cheese
  • 3 tablespoons balsamic glaze
  • Fresh basil leaves for garnish
  • Optional: flaky sea salt for finishing

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a mixing bowl, toss the halved cherry tomatoes with 2 tablespoons of olive oil, sea salt, black pepper, and oregano or basil if using. Spread them cut-side up on a baking sheet in a single layer.
  3. Roast the tomatoes in the oven for 18-20 minutes until soft and caramelized.
  4. Slice the baguette into ยฝ-inch thick pieces. Brush each slice lightly with olive oil on both sides.
  5. Toast the bread in the oven for 5-7 minutes until golden and crisp, flipping halfway through, or toast in a grill pan over medium heat.
  6. Rub the halved garlic cloves gently over the warm toasted bread to infuse flavor.
  7. Tear the burrata into chunks and spread over each toasted slice.
  8. Spoon the warm roasted cherry tomatoes on top, catching some of the juices.
  9. Drizzle each bruschetta with balsamic glaze and garnish with fresh basil leaves and flaky sea salt if desired.
  10. Serve immediately while the bread is crisp and tomatoes are warm.

Notes

If balsamic glaze is too thick, stir in a splash of water and gently reheat. If too thin, simmer longer to reduce. Do not overcrowd tomatoes when roasting to ensure caramelization. Burrata is delicate; tear gently to preserve texture. For gluten-free, use gluten-free bread; for dairy-free, use vegan burrata or cashew cheese.
