  • 1.5 pounds boneless skinless chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 shallots, finely minced
  • 3 garlic cloves, minced
  • 3 tablespoons Dijon mustard
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • Optional: ¼ cup white wine
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  3. Place chicken thighs in the pan and cook undisturbed for about 5 minutes until golden brown. Flip and cook the other side for 4-5 minutes until cooked through. Remove chicken and set aside.
  4. Lower heat to medium and add butter. Once melted, add minced shallots and garlic. Cook until fragrant and translucent, about 2-3 minutes.
  5. Pour in chicken broth (and white wine if using), scraping up browned bits from the pan. Let reduce for 2-3 minutes.
  6. Stir in Dijon mustard until incorporated, then add heavy cream. Simmer gently for 5-7 minutes until sauce thickens and coats the back of a spoon.
  7. Add fresh thyme, parsley, and red pepper flakes if desired. Adjust salt and pepper to taste.
  8. Return chicken to the pan, nestle into the sauce, and simmer for another 2-3 minutes to heat through and meld flavors.
  9. Stir in lemon juice just before serving to brighten the sauce.
  10. Serve hot with sauce spooned over chicken, alongside mashed potatoes, rice, or crusty bread.

Notes

Dry chicken thoroughly before seasoning to get a good sear. Keep heat moderate when simmering cream to prevent curdling. Deglaze pan with broth or wine to add flavor. If sauce thickens too much, add a splash of broth or cream to loosen it.
