  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup (120ml) heavy cream
  • 1 vanilla bean
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup (120g) powdered sugar
  • 2–3 tablespoons heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Grease a 9-inch round cake pan with butter or cooking spray. Line the bottom with parchment paper, grease the paper, and dust with flour.
  3. Split the vanilla bean lengthwise and scrape out the seeds.
  4. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  5. Add the vanilla bean seeds and vanilla extract, beat for 30 seconds.
  6. Add eggs one at a time, beating well after each addition.
  7. In a separate bowl, whisk together flour, baking powder, and salt.
  8. Alternate adding the flour mixture and heavy cream to the butter mixture, starting and ending with flour. Mix until just combined.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. For the glaze: whisk together powdered sugar, 2-3 tablespoons heavy cream, and vanilla extract until smooth and pourable.
  13. Once the cake is completely cool, pour the glaze over the top and spread gently.
  14. Let the glaze set for 15-20 minutes before serving.

Notes

Room temperature ingredients are crucial for best texture. Don’t overmix the batter. Save the empty vanilla bean pod to make vanilla sugar. The cake tastes even better on day two.
