Cozy Turkey White Bean Chili – Easy One-Pot Recipe

This hearty and flavorful turkey white bean chili with kale is a comforting one-pot meal that comes together in about 45 minutes. It’s perfect for meal prep and packed with protein, fiber, and nutrients.

  • 1 pound ground turkey (93% lean)
  • 2 cans (15 ounces each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 large bunch kale (lacinato preferred), stems removed and leaves roughly chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (4 ounces) diced green chilies
  • 4 cups low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste (start with 1 teaspoon salt)
  • 2 tablespoons olive oil
  • Optional toppings: sour cream or Greek yogurt, sliced avocado, fresh cilantro, lime wedges, shredded Monterey Jack cheese, crushed tortilla chips

Instructions

  1. Prep the kale: Wash kale thoroughly, strip leaves from tough stems, stack leaves, roll into a cigar shape, and slice into thin ribbons. Set aside.
  2. Brown the turkey: Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up, until well-browned (6-8 minutes). Season with a pinch of salt and pepper. Transfer turkey to a bowl using a slotted spoon, leaving rendered fat in the pot.
  3. Sauté the aromatics: Reduce heat to medium. Add remaining 1 tablespoon olive oil. Add diced onion and cook until soft and translucent (about 5 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  4. Bloom the spices: Add cumin, oregano, and smoked paprika to the pot. Stir constantly for about 30 seconds until fragrant. Add a splash of broth if it looks dry.
  5. Build the base: Pour in chicken broth and scrape up browned bits from the bottom of the pot. Add diced green chilies and browned turkey. Stir to combine.
  6. Add the beans: Add drained and rinsed white beans. Stir gently. Bring to a boil, then reduce heat to low. Simmer uncovered for 20 minutes.
  7. Wilt the kale: After 20 minutes, stir in kale ribbons. Cover the pot and cook for 5 minutes until kale is wilted.
  8. Finish and adjust: Taste and add more salt and pepper as needed. For more heat, add a pinch of cayenne or dash of hot sauce.
  9. Rest and serve: Turn off heat and let chili sit for 5 minutes. Ladle into bowls and top with desired garnishes.

Notes

For a thicker chili, mash half a can of beans before adding. Leftovers taste even better the next day. Can be made in a slow cooker: brown turkey and sauté aromatics first, then cook on low for 6 hours or high for 3 hours, adding kale 15 minutes before serving.
