  • ½ cup plain Greek yogurt
  • ½ cup canned pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 2 tablespoons maple syrup (adjust to taste)
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice (store-bought or homemade)
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): pumpkin seeds (pepitas), extra maple syrup or honey, Greek yogurt or whipped cream, extra pumpkin pie spice or cinnamon, chopped pecans or walnuts

Instructions

  1. Gather your ingredients. Take everything out of the pantry and fridge.
  2. Mix the wet ingredients. In a medium bowl or directly in your jar, combine the milk, Greek yogurt, pumpkin puree, maple syrup, and vanilla extract. Whisk until smooth.
  3. Add the dry ingredients. Stir in the rolled oats, chia seeds, pumpkin pie spice, and salt. Mix well, breaking up any clumps of chia seeds with a fork.
  4. Divide into jars. Pour the mixture evenly into your jars or containers, leaving about an inch of space at the top.
  5. Seal and shake. Screw on the lids tightly and give each jar a good shake to ensure everything is well combined.
  6. Refrigerate overnight. Place the jars in the fridge for at least 6 hours, but overnight is best.
  7. Serve cold or warm. In the morning, take a jar out of the fridge. Eat cold right from the jar, or microwave for 30-60 seconds if you prefer warm oats. Stir well before eating.
  8. Add toppings. Sprinkle pumpkin seeds, chopped nuts, or a dash of extra pumpkin pie spice on top. Drizzle with more maple syrup if desired.

Notes

Use old-fashioned rolled oats for best texture. Quick oats get too mushy, steel-cut oats stay too chewy. Chia seeds are essential for thickening—do not skip them.
