A quick, comforting dessert for two featuring tart apples and a crunchy oat topping, perfect for rainy evenings or late-night cravings.

Ingredients

Scale
  • 2 medium apples, peeled, cored, and sliced thinly
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 cup rolled oats (old-fashioned)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon cold butter, cubed
  • 1/4 teaspoon nutmeg
  • A pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small mixing bowl, toss sliced apples with lemon juice, granulated sugar, cinnamon, cornstarch, and water until evenly coated.
  3. Transfer the apple mixture to a 6-inch ramekin or small oven-safe baking dish, spreading evenly.
  4. In a separate bowl, combine rolled oats, flour, brown sugar, nutmeg, and salt.
  5. Add cold cubed butter to the dry mixture and rub in with fingers or a fork until it resembles coarse crumbs with pea-sized bits.
  6. Sprinkle the crumble topping evenly over the apples.
  7. Place the dish on a baking sheet and bake for 20-25 minutes, or until the topping is golden brown and juices are bubbling.
  8. Let cool for 5 minutes before serving warm.

Notes

Use cold butter for a flaky topping. If the top browns too quickly, cover loosely with foil. For a gluten-free version, use certified gluten-free oats and 1:1 gluten-free flour. Can be made dairy-free by substituting butter with cold coconut oil or vegan butter.
