  • 2–3 lbs beef chuck roast, cut into thin strips against the grain
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 1/2 cup beef broth
  • 2 tablespoons sesame oil
  • 4–5 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons rice vinegar
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • 4 cups broccoli florets (about 2 medium heads)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional garnishes: sesame seeds, sliced green onions, extra sesame oil

Instructions

  1. Pat the chuck roast dry with paper towels. Slice against the grain into thin strips, about 1/4-inch thick. Season lightly with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Working in batches, sear the beef strips for 2-3 minutes per side until a deep brown crust forms. Transfer to the slow cooker.
  3. In a medium bowl, whisk together soy sauce, brown sugar, beef broth, sesame oil, minced garlic, grated ginger, and rice vinegar until the sugar is mostly dissolved.
  4. Pour the sauce mixture over the seared beef in the slow cooker. Stir gently to coat.
  5. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the beef is fork-tender.
  6. About 30 minutes before serving, add the broccoli florets to the slow cooker. Stir gently, cover, and cook on HIGH for 20-30 minutes until tender-crisp.
  7. In a small bowl, mix cornstarch and cold water to form a slurry. Remove the lid, turn the slow cooker to HIGH, and pour in the slurry. Stir gently and cook uncovered for 5-10 minutes until the sauce thickens to a glossy, syrupy consistency.
  8. Taste and adjust seasoning with more soy sauce, brown sugar, or rice vinegar as desired.
  9. Serve immediately over steamed rice or noodles. Garnish with sesame seeds, sliced green onions, and a drizzle of sesame oil if desired.

Notes

Don’t skip searing the beef—it adds deep flavor. Slice against the grain for tenderness. Add broccoli late to keep it tender-crisp. Thicken sauce at the end with cornstarch slurry. Every slow cooker runs differently; check beef at 4 hours on low.
