Instructions

  1. Preheat oven to 375°F (190°C). Place two 10-ounce ramekins on a baking sheet.
  2. Peel, core, and dice apples into ½-inch cubes. Toss with 2 tablespoons granulated sugar, 1 tablespoon brown sugar, 1 tablespoon flour, ½ teaspoon cinnamon, and a pinch of nutmeg. Let sit 5 minutes.
  3. Divide apple mixture evenly between ramekins. Dot each with 1 tablespoon butter pieces and a splash of vanilla extract.
  4. In a bowl, combine ⅓ cup oats, ⅓ cup flour, ⅓ cup packed brown sugar, and ¼ teaspoon salt. Cut in 3 tablespoons cold butter until mixture resembles coarse crumbs with some pea-sized butter bits.
  5. Sprinkle topping evenly over apples. Do not press down.
  6. Bake 28-32 minutes until topping is golden brown and apple juices bubble around edges. Tent with foil if browning too fast.
  7. While baking, make caramel: In a small saucepan over medium heat, melt 2 tablespoons butter with 2 tablespoons brown sugar, stirring constantly until bubbling (about 2 minutes). Slowly stir in 2 tablespoons heavy cream. Simmer 1 minute, remove from heat, and stir in ¼ teaspoon flaky sea salt.
