Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter and granulated sugar together on medium speed until just combined (about 1-2 minutes). Do not overmix.
  3. Beat in egg and vanilla extract until fully incorporated and smooth.
  4. Sprinkle pumpkin pie spice over the butter mixture and beat for about 30 seconds to bloom the spice.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  7. Using a cookie scoop or tablespoon, scoop rounded tablespoons of dough (about 1.5 tablespoons each) and place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set and lightly golden. Centers should look slightly puffed and soft.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  10. For the icing: In a small bowl, whisk together powdered sugar, 2 tablespoons milk, and vanilla extract until smooth. Add more milk if needed for drizzling consistency.
  11. Drizzle icing over cooled cookies. Let icing set for about 30 minutes before serving.

Notes

Don’t overmix the dough to avoid tough cookies. Use room temperature ingredients for best results. If dough is too sticky, chill for 15-20 minutes. For a softer cookie, bake for 10 minutes; for crisper edges, bake for 12 minutes. Cookies taste even better the next day as flavors meld.
