  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • ยผ cup (50g) granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until evenly combined.
  3. In a separate bowl, whisk granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth and slightly thickened.
  4. Slowly fold the dry mixture into the wet mixture just until combined, avoiding overmixing.
  5. In a medium bowl, beat cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
  6. Spoon about 2 tablespoons of pumpkin batter into each muffin cup. Add about 1 tablespoon of cream cheese mixture on top of the batter in each cup.
  7. Use a toothpick or skewer to gently swirl the cream cheese into the pumpkin batter without overdoing it.
  8. Mix 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle evenly over each muffin.
  9. Bake for 20โ€“25 minutes or until a toothpick inserted into the pumpkin batter (not the cream cheese) comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature eggs and cream cheese for easier mixing and better swirl effect. Avoid overmixing the batter to keep muffins tender. Sprinkle cinnamon sugar topping just before baking to maintain crunch. Use an ice cream scoop for even muffin portions. If cream cheese mixture is too stiff, add a splash of milk to loosen it.
