Instructions

  1. Wash and prepare peaches: rinse under cool water, peel if desired, and slice into 1/2-inch thick wedges. Set aside in a large bowl.
  2. Mix peach filling: sprinkle peaches with granulated sugar, lemon juice, cinnamon, and nutmeg. Toss gently to coat and let sit while preparing batter.
  3. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with softened butter or non-stick spray.
  4. Make the batter: whisk together flour, baking powder, and salt. In another bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract. Alternately add flour mixture and milk, starting and ending with flour. Fold in blended cottage cheese if using.
  5. Assemble the dish: pour half the batter into the baking dish and spread evenly. Layer the peach mixture with juices over the batter. Pour remaining batter on top and spread gently to cover peaches.
