  • 1 teaspoon baking soda

  • 1 cup (226 grams) unsalted butter, softened
  • ยฝ cup (120 ml) pure maple syrup
  • ยฝ cup (100 grams) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120 grams) chopped pecans, toasted

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper or silicone mats.
  2. Toast the chopped pecans on a small baking sheet in the oven for 5-7 minutes until fragrant and lightly browned. Remove and let cool.
  3. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined. Set aside.
  4. In another large bowl, beat the softened butter with maple syrup using an electric mixer on medium speed until creamy and light, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until fully incorporated.
  6. Gradually add the dry ingredients to the wet, mixing on low speed or folding with a spatula until just combined. Avoid overmixing.
  7. Gently stir in the cooled toasted pecans.
  8. In a small bowl, combine granulated sugar and 1 teaspoon cinnamon for the coating.
  9. Scoop about 1.5 tablespoons (23 grams) of dough per cookie. Roll each ball between your hands to smooth, then roll in the cinnamon-sugar mixture to coat well.
  10. Place dough balls about 2 inches (5 cm) apart on the prepared baking sheets.
  11. Bake for 10-12 minutes until edges are set but centers still look soft.
  12. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If dough is too sticky to roll, chill in the fridge for 15-20 minutes. Rotate cookie sheets halfway through baking for even cooking. Toast pecans carefully to avoid burning. Store cookies with a slice of bread in an airtight container to maintain softness.
