Cozy Maple Glazed Pork Chops with Roasted Apples: Easy One-Pan Dinner

Juicy pork chops and caramelized apples roasted together on one pan with a maple-thyme glaze. This easy one-pan dinner is perfect for cozy fall evenings and comes together in about 35 minutes.

  • 4 bone-in pork chops, about 1-inch thick
  • 2 large Honeycrisp or Fuji apples, cored and cut into 1/2-inch wedges
  • 1/3 cup pure maple syrup (Grade A Dark Amber preferred)
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon olive oil
  • 4–5 sprigs fresh thyme
  • 3 cloves garlic, smashed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt (Diamond Crystal preferred)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper. Let them sit at room temperature for 10-15 minutes.
  2. In a small bowl, whisk together the maple syrup, Dijon mustard, and cinnamon (if using). Set aside.
  3. Core the apples and cut them into 1/2-inch wedges. Toss with a pinch of salt and a drizzle of olive oil if desired.
  4. Heat 1 tablespoon olive oil in a cast iron skillet over medium-high heat until shimmering. Sear the pork chops for 3-4 minutes per side until a deep golden crust forms. Work in batches if needed.
  5. Transfer the seared chops to a large rimmed baking sheet. Scatter the apple wedges and smashed garlic cloves around them. Tuck the thyme sprigs in between. Dot the butter pieces over the apples.
  6. Drizzle about half the maple glaze over the pork chops and apples, reserving the rest. Roast for 12-15 minutes, until the internal temperature of the pork reaches 140°F.
  7. Remove the pan from the oven. Brush or spoon the remaining maple glaze over the hot pork chops. Let rest on the pan for 5 minutes.
  8. Transfer the pork chops and apples to a platter. Spoon any pan juices over the top. Discard the thyme sprigs and garlic cloves (or spread the soft garlic on bread). Sprinkle with fresh thyme leaves and a crack of black pepper if desired.

Notes

Don’t skip the sear—it creates a golden crust that adds flavor. Arrange apple wedges in a single layer for proper caramelization. Use a meat thermometer for perfect doneness (pull at 140°F, rest to 145°F). Let chops sit at room temperature for 15 minutes before cooking for even cooking. Double the apples if desired.
