Cozy Kielbasa and White Bean Soup – Easy One-Pot Dinner

A hearty, smoky soup made with browned kielbasa, creamy white beans, and fresh spinach in a savory broth. Ready in about 35 minutes, this one-pot meal is perfect for cold weather and busy weeknights.

  • 14 oz (400g) kielbasa, sliced
  • 1 tbsp (15 ml) olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cans (15 oz / 425g each) cannellini beans, drained and rinsed
  • 4 cups (960 ml) low-sodium chicken broth
  • 1 can (14.5 oz / 411g) diced tomatoes, undrained
  • 1 tsp (2g) dried thyme
  • 1 tsp (2g) dried oregano
  • 1 bay leaf
  • 3 cups (90g) fresh spinach
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Brown the kielbasa: Heat olive oil in a large pot over medium-high heat. Add sliced kielbasa in a single layer and cook 3-4 minutes per side until deeply browned. Transfer to a plate; do not wipe the pot.
  2. Sauté the vegetables: Reduce heat to medium. Add onion, carrots, and celery. Cook 5-6 minutes, stirring occasionally, until onions are translucent and vegetables soften. Scrape up browned bits from the pot.
  3. Add the garlic: Stir in garlic, thyme, oregano, and red pepper flakes (if using). Cook 1 minute until fragrant.
  4. Add liquids and beans: Pour in chicken broth and diced tomatoes. Add cannellini beans, bay leaf, and 1/2 tsp salt. Stir to combine.
  5. Simmer the soup: Bring to a boil, then reduce heat to low. Cover and simmer 15 minutes.
  6. Add kielbasa and spinach: Return browned kielbasa to the pot. Stir in spinach and cook 2-3 minutes until wilted.
  7. Season and serve: Remove bay leaf. Taste and adjust seasoning with salt and pepper. Ladle into bowls and serve immediately.

Notes

For best flavor, brown the kielbasa thoroughly. Use low-sodium broth to control saltiness. The soup tastes even better the next day. To thicken, mash some beans against the pot. For a vegetarian version, skip kielbasa and use smoked paprika and liquid smoke.
