  • 1.5 lbs (680g) boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz / 425g each) white beans (Great Northern or cannellini), drained and rinsed
  • 2 cans (4 oz / 113g each) fire-roasted diced green chiles (with liquid)
  • 3 cups (720 ml) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder (mild ancho recommended)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 4 oz (113g) cream cheese, softened
  • ¼ cup chopped fresh cilantro (plus more for garnish)
  • 2 tablespoons lime juice (from about 1 lime)
  • Optional toppings: shredded Monterey Jack cheese, diced avocado, sour cream, tortilla chips, sliced jalapeños, Greek yogurt

Instructions

  1. Place the chicken in the bottom of a 6-quart or larger crockpot. Scatter the diced onion and minced garlic over the chicken.
  2. Drain and rinse the white beans, then add them to the pot. Pour in both cans of fire-roasted green chiles, including the liquid.
  3. Sprinkle the ground cumin, dried oregano, chili powder, salt, and black pepper over everything. Pour in the chicken broth, making sure the chicken is mostly submerged. Give it a gentle stir.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fork-tender and easily shredded.
  5. Using two forks, shred the chicken right in the pot.
  6. Remove about 1 cup of beans and a little broth from the pot and place in a small bowl. Add the softened cream cheese and mash together until smooth. Alternatively, use an immersion blender to blend about 1 cup of the chili with the cream cheese directly in the pot.
  7. Stir the cream cheese mixture back into the chili. Let it cook for another 15-20 minutes on low to allow the flavors to meld.
  8. Stir in the chopped cilantro and lime juice. Taste and adjust seasoning as needed.
  9. Ladle into bowls and top with desired garnishes. Serve hot.

Notes

For a thicker chili, let it cook uncovered for the last 30 minutes. If too thick, add a splash of chicken broth. Chili tastes even better the next day. To freeze, cool completely and store in freezer-safe containers for up to 3 months.
