  • 2 cans (15 oz each) cannellini beans or great northern beans, drained and rinsed
  • 4 cups (32 oz) low-sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 4 oz cream cheese, softened and cut into cubes
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once shimmering, add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant.
  2. Add the cumin, oregano, chili powder, and cayenne (if using) to the skillet. Stir constantly for about 30 seconds to bloom the spices.
  3. Scrape the onion and spice mixture into a 6-quart slow cooker. Add the drained and rinsed white beans, the can of green chiles (with their juices), and the chicken broth. Stir to combine.
  4. Nestle the chicken breasts into the liquid, ensuring they are mostly submerged. Season the chicken with a little salt and pepper.
  5. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fork-tender and easily shreds.
  6. Carefully remove the cooked chicken from the slow cooker and place on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  7. Return the shredded chicken to the slow cooker. Add the cubed cream cheese and stir until completely melted and incorporated into the broth (a few minutes).

Notes

For best texture, use full-fat cream cheese (e.g., Philadelphia). If chili is too thick after adding cream cheese, stir in a splash of extra chicken broth or milk. To thicken a watery chili, mash some beans against the side of the pot or cook uncovered for the last 30 minutes.
