This foolproof crockpot chicken breast recipe delivers tender, juicy chicken every time with minimal prep. Perfect for busy weeknights, meal prep, or when you need a guaranteed win in the kitchen.

  • 1.5 to 2 pounds (680 to 900 grams) boneless, skinless chicken breasts
  • 1/2 cup (120 ml) low-sodium chicken broth
  • 2 tablespoons (28 grams) unsalted butter
  • 4 cloves garlic, smashed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides evenly with salt, pepper, onion powder, thyme, and rosemary.
  2. Place the smashed garlic cloves in the bottom of the crockpot.
  3. Place the seasoned chicken breasts in a single layer over the garlic, trying not to overlap them.
  4. Slowly pour the chicken broth around the edges of the chicken, not directly on top.
  5. Place the butter pats on top of the chicken breasts.
  6. Cover and cook on LOW for 2.5 to 3.5 hours. Do not cook on high.
  7. Insert a meat thermometer into the thickest part of the largest breast. It should read 165°F (74°C). If not, cook for another 20 to 30 minutes and check again.
  8. Once done, turn off the crockpot and let the chicken rest in the warm liquid for 5 to 10 minutes.
  9. Remove the chicken with tongs. For slices, cut against the grain. For shredding, use two forks. Drizzle a little of the cooking liquid over the top before serving.

Notes

For best results, use evenly sized chicken breasts. Do not lift the lid during cooking. If chicken breasts are small (around 6 ounces each), start checking at 2 hours. Larger ones (10 ounces or more) may need closer to 4 hours. The cooking liquid can be used to make a quick pan sauce or as a base for soup.
