  • 1 cup carrots, finely shredded (optional)

Instructions

  1. Prep the vegetables: Wash the broccoli and chop it into small florets. Peel the stalks and dice them into small pieces. Finely dice the onion and mince the garlic. If using carrots, peel and shred them.
  2. Sautรฉ the aromatics: In a large skillet or saucepan over medium heat, melt the butter. Add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant.

  4. Add the liquid: Slowly pour in the chicken broth while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer, then cook for 2-3 minutes until it thickens slightly.
  5. Transfer to the slow cooker: Pour the broth mixture into your crockpot. Add the chopped broccoli, shredded carrots (if using), Dijon mustard, salt, pepper, and paprika. Stir everything together.
  6. Cook on low: Cover the slow cooker and cook on low for 4-5 hours, or on high for 2-3 hours, until the broccoli is very tender.
  7. Blend a portion: About 30 minutes before serving, use an immersion blender to blend about half of the soup directly in the crockpot. If using a regular blender, carefully transfer about 2 cups of soup, blend until smooth, and return to the pot.
  8. Add the milk and cream: Stir in the whole milk and heavy cream. Let the soup cook for another 15-20 minutes on low to heat through. Do not boil.
  9. Add the cheese: Turn off the slow cooker. Gradually add the shredded cheddar cheese, a handful at a time, stirring gently until each addition is fully melted.
  10. Adjust seasoning: Taste the soup and add more salt, pepper, or a pinch of paprika if needed.
  11. Serve immediately: Ladle the soup into bowls and enjoy while hot and creamy.

Notes

Shred your own cheese for the smoothest melt. Add cheese at the end to prevent graininess. Don’t over-blend; leave some broccoli chunks for texture. If soup is too thin, let it cook uncovered for 30 minutes or add a cornstarch slurry. If too thick, stir in extra warm milk or broth.
