Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt ½ cup (113g) unsalted butter. Stir gently as it melts and foams. After about 5 minutes, when it turns golden brown and smells nutty, remove from heat and let cool for 5 minutes. Watch carefully to avoid burning.
  2. Prepare the zucchini: Grate 1 ½ cups (about 2 medium) zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture to prevent sogginess.
  3. Mix dry ingredients: In a medium bowl, whisk together 2 cups (240g) all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, 1 teaspoon ground cinnamon, and ¼ teaspoon nutmeg if using.
  4. Combine wet ingredients: In a large bowl, whisk the browned butter with 1 cup (200g) granulated sugar until combined. Add 2 large eggs and 1 teaspoon vanilla extract, whisking until smooth.
