Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round or loaf pan with butter and dust with flour.
  2. Brown the butter: Melt butter cubes in a medium saucepan over medium heat, stirring constantly until it foams, crackles, and develops a nutty aroma with brown specks. Remove from heat and pour into a heatproof bowl to cool slightly.
  3. Whisk together sifted flour, baking soda, cinnamon, nutmeg, ginger, cardamom, and salt in a large bowl.
  4. In another large bowl, whisk the slightly cooled brown butter and brown sugar until smooth and glossy.
  5. Beat in eggs one at a time, then stir in the plain yogurt until combined.
  6. Gradually add dry ingredients to wet ingredients, folding gently with a spatula until just combined.
  7. Pour batter into prepared pan and bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.
