A warm, comforting apple crisp featuring browned butter for a nutty depth, perfect for easy fall desserts. Ready in under 45 minutes, this recipe combines tart Granny Smith apples with a crunchy oat topping and is best served with vanilla ice cream.

Ingredients

Scale
  • 6 medium Granny Smith apples, peeled, cored, and sliced
  • 1/2 cup (1 stick) unsalted butter, browned
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup packed brown sugar (preferably dark brown sugar)
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Vanilla ice cream, for serving

Instructions

  1. Peel, core, and slice 6 medium Granny Smith apples into roughly 1/4-inch thick slices. Toss them in a large bowl with 1/4 cup granulated sugar, 1 teaspoon vanilla extract, 1/4 teaspoon salt, 1 1/2 teaspoons cinnamon, and 1/4 teaspoon nutmeg. Mix gently until every slice is coated.
  2. In a medium heavy-bottomed saucepan over medium heat, melt 1/2 cup (1 stick) of unsalted butter. Stir constantly as it foams and begins to brown, turning a golden caramel color with a nutty aroma. Remove from heat just before it starts to burn.
  3. In a separate bowl, combine 1 cup old-fashioned rolled oats, 3/4 cup packed dark brown sugar, and 3/4 cup all-purpose flour. Pour the warm brown butter over this mixture, stirring with a wooden spoon or spatula until crumbly clumps form.
  4. Spread the spiced apple slices evenly in a 9×13-inch baking dish. Distribute the brown butter oat topping evenly over the apples without pressing down.
  5. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes until the topping is golden brown and crisp, and the apples are bubbling at the edges.
  6. Let the crisp rest for about 10 minutes to thicken the juices. Serve warm with generous scoops of creamy vanilla ice cream.

Notes

If apples seem watery, toss with 1 tablespoon cornstarch before baking to prevent runny filling. Tent with foil if topping browns too fast. Use almond or oat flour for gluten-free option. Brown butter carefully on medium heat, stirring constantly to avoid burning.
