  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed

  • ½ cup plain Greek yogurt (can swap with dairy-free yogurt)
  • For the Walnut Cinnamon Streusel:
  • ½ cup chopped walnuts (toasted)
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan with butter or line it with parchment paper.
  2. Prepare the streusel: In a small bowl, combine chopped walnuts, flour, brown sugar, and cinnamon. Cut in the cold, cubed butter until mixture resembles coarse crumbs. Refrigerate.
  3. Grate the zucchini using a box grater. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  4. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. In another bowl, whisk mashed bananas, granulated sugar, brown sugar, eggs, oil, vanilla extract, and Greek yogurt until smooth.
  6. Gently fold the wet mixture into the dry ingredients, then fold in the grated zucchini until just combined.
  7. Pour batter into the prepared loaf pan and spread evenly. Sprinkle the walnut cinnamon streusel generously over the top.
  8. Bake for 55-65 minutes, checking doneness with a toothpick (should come out clean or with a few moist crumbs). If streusel browns too fast, tent with foil halfway through baking.
  9. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Squeeze out excess moisture from zucchini to avoid soggy bread. Use room temperature eggs and ingredients for better blending. Fold batter gently to prevent toughness.
