Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and halve 4 large ripe peaches, removing the pits. Toss them gently with 1 tablespoon of fresh lemon juice and a pinch of sea salt.
  3. Arrange the peaches cut side up in your baking dish.
  4. In a medium bowl, combine 1/3 cup packed dark brown sugar, 1/2 cup rolled oats, 1/4 cup all-purpose flour, and 1 teaspoon ground cinnamon. Add 4 tablespoons of cold, cubed unsalted butter and 1 teaspoon vanilla extract.
  5. Use a pastry cutter or fork to blend the butter into the dry ingredients until the mixture resembles coarse crumbs, about 3-4 minutes.
  6. Evenly sprinkle the crumble over the peaches.
  7. Bake for 30-35 minutes until the topping is golden brown and the peaches are tender and bubbling.
  8. Remove from the oven and let it cool slightly for about 10 minutes.
  9. Serve warm with scoops of your favorite vanilla ice cream.

Keep the butter cold when mixing the crumble to ensure a crispy texture. Use firm but ripe peaches to avoid sogginess. If peaches are very juicy, place a baking sheet under the dish to catch drips.
