Instructions

  1. Reduce the apple cider: Pour 2 cups of apple cider into a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until reduced to about ¾ cup (15-20 minutes). Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.
  4. In a large bowl, beat softened butter, vegetable oil, brown sugar, and granulated sugar with an electric hand mixer on medium speed until light and fluffy (3-4 minutes).
  5. Beat in eggs one at a time, then mix in vanilla extract.
  6. With mixer on low speed, add dry ingredients in three additions, alternating with reduced apple cider, starting and ending with dry ingredients. Mix just until combined.
  7. Pour batter into prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let cake cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
  9. Make the glaze: In a small saucepan, melt butter over medium heat. Add brown sugar and milk, stirring constantly until sugar dissolves and mixture comes to a gentle simmer. Cook for 1-2 minutes, then remove from heat. Whisk in powdered sugar, vanilla, and salt until smooth.
  10. Once cake is completely cool, pour glaze over the top, letting it drip down the sides. Let glaze set for at least 10 minutes before slicing.

Notes

Don’t skip the cider reduction—it concentrates the apple flavor. Use room temperature eggs for better emulsification. Let cake cool completely before glazing to prevent glaze from running off. For best results, use fresh, unfiltered apple cider.
