  • 1/2 cup granulated white sugar
  • 1/2 cup pure maple syrup (Grade A Dark Amber)
  • 2 large eggs, room temperature

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup pecan halves, toasted
  • Flaky sea salt (such as Maldon) for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a medium saucepan over medium heat, melt the butter. Stir constantly until it foams, settles, and develops brown bits with a nutty aroma. Remove from heat and pour into a heatproof bowl to cool for 10 minutes.
  3. In a large mixing bowl, combine the cooled browned butter, light brown sugar, and granulated sugar. Whisk vigorously for 2 minutes until glossy and thickened.
  4. Whisk in the maple syrup, eggs, and vanilla extract until fully combined.
  5. In a separate bowl, whisk together the flour, baking powder, and fine sea salt. Gradually add dry ingredients to the wet mixture and fold gently with a spatula until just combined. Do not overmix.
  6. Fold in the toasted pecan halves.
  7. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes until edges are golden and center is just set (toothpick should have moist crumbs).
  8. Cool in the pan for at least 20 minutes. Sprinkle with flaky sea salt before cutting into squares.

Notes

Ensure eggs are at room temperature to prevent the batter from seizing. Do not overmix the flour to maintain a chewy texture. Blondies are best stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
