  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 1 cup (226g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) packed light brown sugar
  • ยฝ cup (100g) granulated sugar
  • 2 large egg yolks + 1 large whole egg
  • 2 teaspoons vanilla extract
  • 2 cups (340g) semi-sweet or dark chocolate chips

Instructions

  1. Melt the butter and let it cool for 5-10 minutes until warm but not hot.
  2. In a large bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, whisk the cooled melted butter with brown sugar and granulated sugar for about a minute until smooth and slightly thickened.
  4. Add the whole egg, egg yolks, and vanilla extract. Whisk until pale and glossy, about 30 seconds.
  5. Pour the wet mixture into the dry ingredients. Fold with a rubber spatula until just a few streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips until evenly distributed. The dough will be thick and slightly sticky.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 72 hours.
  8. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper or silicone mats.
  9. Scoop dough into 2-tablespoon portions and roll into smooth balls. Place on prepared baking sheets, spacing 2 inches apart. For extra-thick cookies, chill the scooped dough balls for 10 minutes before baking.
  10. Bake for 11-13 minutes, until edges are golden brown and centers are just set and slightly puffy.
  11. Let cookies rest on the hot baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
  12. Repeat with remaining dough, letting baking sheets cool completely between batches.

Notes

Chilling the dough is essential for thick cookies. For a crackly top, bang the baking sheet on the counter halfway through baking. Cookies can be frozen for up to 3 months.
