Best Savory Sausage & Apple Stuffed Acorn Squash

Tender roasted acorn squash filled with savory sweet Italian sausage, sweet apples, sharp cheddar, and crunchy pecans. This balanced, crowd-pleasing fall dish is hearty enough for a main course and elegant enough for company.

  • 2 medium acorn squashes
  • 1 pound sweet Italian sausage
  • 1 medium apple (Honeycrisp or Fuji), cored and cut into 1/4-inch cubes
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C). Wash acorn squashes and pat dry.
  2. Cut squashes in half from stem to root. Scoop out seeds and stringy pulp with a spoon.
  3. Brush cut sides with melted butter and season with salt and pepper. Place cut-side down on a baking dish. Roast for 25 minutes until fork-tender but still holding shape.
  4. While squash roasts, heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and cook 4-5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
  5. Add sausage to the skillet. Break it up with a wooden spoon and cook 6-8 minutes until browned. Drain excess fat if needed.
  6. Core apple and cut into 1/4-inch cubes (no need to peel).
  7. Remove skillet from heat. Stir in diced apple, dried cranberries, chopped pecans, dried sage, and dried thyme. Mix well. Season with salt and pepper to taste.
  8. After 25 minutes, remove squash from oven. Flip halves cut-side up. Drain any liquid from the dish.
  9. Divide sausage mixture evenly among the four squash halves (about 1/2 cup per half). Pack gently.
  10. Sprinkle shredded cheddar over each stuffed half. Bake for 15-20 minutes until cheese is melted and bubbly. Tent with foil if cheese browns too quickly.
  11. Let rest for 5 minutes before serving. Garnish with fresh parsley or extra chopped pecans if desired.

Notes

Toast pecans in a dry skillet for 2-3 minutes for deeper flavor. Don’t overcook squash in the first round—it should be tender but firm. Make extra filling for leftovers. For dairy-free, omit butter and cheese. For spicy version, use hot Italian sausage and add red pepper flakes.
