  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (smoked or sweet)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (preferably European-style)
  • 6 cloves garlic, smashed
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped
  • 1/2 lemon, juiced

Instructions

  1. Prep the pork chops: Take pork chops out of the fridge 15 minutes before cooking. Pat dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and paprika.
  2. Heat your pan: Place a large skillet over medium-high heat and add olive oil. Heat until shimmering and almost smoking.
  3. Sear the pork chops: Carefully lay pork chops in the hot pan. Cook without moving for 3-4 minutes until deep golden brown. Flip and cook for another 2-3 minutes on the second side. Internal temperature should reach 145°F.
  4. Make the garlic butter sauce: Reduce heat to medium-low. Push pork chops to one side. Add butter and smashed garlic cloves to the empty space. Let butter melt slowly, scraping up browned bits from the pan bottom.
  5. Finish the sauce: Pour in chicken broth and add fresh thyme. Let bubble gently for about 1 minute, stirring occasionally. Squeeze in lemon juice and stir.
  6. Coat and serve: Spoon garlic butter sauce over pork chops. Let simmer together for 1 minute. Sprinkle with fresh parsley and serve immediately.

Notes

Don’t skip patting the pork chops dry for a good sear. Smash garlic cloves instead of slicing to prevent burning. Use a meat thermometer to avoid overcooking (145°F). Let pork chops rest 3-5 minutes before serving. For a dairy-free version, use vegan butter or ghee. To reheat, use a skillet with a splash of broth over medium-low heat.
